    Guardian Cellars when Jerry started the winery he told his winemaker friends that he planned to bottle age his premium red wines at least 12 months before release, a comment that was met with laughter and disbelief. Now, going into our 10th vintage, we are aging our premium reds more than 20 months on almost completely new French oak and have held true to Jerry's rookie taunt - we cellar each premium red at least one year before release. Being patient is a pain, but it sure does create some delicious wines.

  • Hakutsuru Sayuri Nigori Sake 720ML

    Sayuri means “a little lily” in Japanese and contains strong connotations of delicacy, innocence and chastity. Sayuri sake, produced by Hakutsuru Sake Brewing Co., Ltd., lives up to the delicacy evoked by its name with slightly sweet, floral flavors. This product of Japan, like all nigori sakes, is a cloudy liquid. Completing Sayuri's understated image is its unassumingly feminine and faint pink bottle. The drink is light and smooth to swallow; possessing a slight degree of thickness because of its production’s coarse filtering process. Delightfully, there is hardly any after taste. Since this is so refreshing and approachable to drink, be careful not to drink too much! Sayuri is best served chilled and makes an excellent drink with spicy food because of its mild, understated flavors. Not only that, this sake goes well with desserts like dark chocolate brownies.

    Harveys Bristol Cream features flavors of roasted nuts and raisins, with a subtly spicy finish. Harveys Bristol Cream is usually served well chilled as an aperitif, as an after-dinner drink straight, or on the rocks with a wedge of lime or slice of orange. The ice lessens the viscosity and the citrus lowers the sweetness to create a refreshing drink. As a dessert wine, serve with cheesecake, flan, bread pudding or crème brulée.

    Hedges dark, deep ruby color. Aromas of cherry, black cherry and plum fruit of raspberry and blackberry, toasted marshmallow and vanilla with hints of cocoa powder, chocolate and graham cracker. On the palate toasted oak and marshmallow with cherry and raspberry and hints of licorice, cocoa powder and sweetness, medium plus body with well integrated tannins that linger on the long finish. A nicely balanced wine, with enough acid and tannin to make this a more serious, longer lived wine that will go well with food. Our greatest vintage of CMS!

  • Hedges CMS White 750ML

    Hedges light straw color. Aromas of pear, grapefruit peel, wet straw and gooseberry with hints of custard and asparagus. Crisp acidity is apparent on the entry and finish but is balanced by fruit sweetness and a relatively rich and viscous mouthfeel on the mid-palate. The gooseberry and wet straw are evident throughout tasting. the finish is long but invites you to take another drink. A wonderfully complex and inviting Sauvignon Blanc. It is excellent by itself of with shellfish and lighter seafood.

  • Hedges Red Mountain 750ML

    Hedges deep purple color, yet not opaque. A sense of finesse in the color which suggests liveliness on the palate. The mouth feel is angular, with grace and precision. The vintage produced a savory character in the wines, like that of fennel, salt, tar and steel. Highly integrated tannins, dusty in a sense, alongside protective acidity guarding against premature oxidation.
