[yellow tail] Cabernet Merlot combines the blackberry and chocolate characters of the Cabernet Sauvignon with the ripe red fruit flavours of Merlot, creating a quintessential Australian blend of sweetness and spice. [yellow tail] Cabernet Merlot is the perfect blend of Cabernet Sauvignon and Merlot grapes sourced from the highest quality vineyards. Once the grapes are crushed and stems removed, they are fermented on skins in contact with oak. Temperature controlled fermentation ensures maximum varietal flavour, colour and tannin extraction. The wine is bottled at the winery in Yenda, New South Wales.

This Shiraz reveals aromas of ripe cherry, blackberry, chocolate and mocha. The palate is crammed with intense, concentrated fruit, complemented by spicy notes, and soft, well-structured tannins. A step up, this red offers more intense fruit, and a longer, more solid finish.

Full-flavored and bursting with fruit, this wine offers a delightful mixture of peppery, spicy notes, mixed with jammy flavors of black currant and blueberry. Moderately tannic, this wine pairs well with most well-flavored pork and beef dishes, especially if they are spicy.

The addition of Zinfandel adds a touch of softness to the finall blend - softening the shoulders of Cabernet Sauvignon and Merlot. Great fruit sourcing, blending and attention to detail in the winery have yet again produced another great vintage of The Sum. Ripe summer blueberry and blackberry combined with spice box and camphor leap from the glass in the hedonist's dream of a wine. The combination of Cabernet Sauvignon, Petit Syrah and Syrah has created a wine that shows both elegance nuance and raw power on the palate. Adelina the winemaking philosophy is simple: make wines which exhibit a sense of place, the definition of site, climate, and season, whilst utilising minimalist approaches. The two acre block of Grenache was planted circa 1940, the soil is a deep grey sandy loam over a sandstone base. This vineyard is extremely low cropping, where typical fruit yields produce between 50 and 100 dozen wine.

Alamos a classically Argentine wine, our Alamos Malbec blends the deeply concentrated plum flavors of the country's signature variety - Malbec - with small portions of Syrah and Bonarda to add dark cherry and blackberry flavors. Well-integrated hints of brown spice and vanilla contribute layers of complexity. A full structure, firm tannins and a long finish make this Malbec unforgettable.

Alpha Omega II is the culmination of the two worlds, the Alpha and the Omega, the Old World and the New World. Our two winemakers, Jean Hoefliger and Michel Rolland, worked to create a wine that is not only opulent, fruit forward and generous, but also has the backbone of European acidity and elegance. A reflection of both worlds. II is a wine that is built to be approachable, both in taste and price, and consumed early.

The nose displays dark berries, black cherry and blackberry, mingling with oak spice and lavender with a touch of almond. On the palate the wine is velvety smooth, with balanced acidity, sweet raspberry fruit and blueberries with fresh herbs d' Provence on the finish. Cabernet Sauvignon is the core varietal of Napa Valley. Cabernet likes the heat and sun of Napa Valley so it can reach ripe aromas and tannins which make the varietal very exciting. Although, as with every wine, the balance between tannins, acidity, mouth feel and aromas has to be respected. In light of this, we add a touch of Merlot for softness, Cabernet Franc for spice and Petit Verdot to strengthen the wine.

Apothic Red was crafted from a blend of primarily Zinfandel, Syrah, Merlot and Cabernet Sauvignon. These varieties come together seamlessly for a fruit-driven wine with fresh dark fruit flavors and jammy red fruit notes. The Zinfandel offers bold dark fruit flavors and spicy notes, complemented by the soft mouthfeel of Merlot. The Syrah adds layers of smooth blueberry, while the Cabernet Sauvignon delivers ripe fruit flavors and a firm structure. This decadent blend is framed by hints of black cherry, vanilla, and mocha.

Barefoot Impression Red Blend is jammy and rich with lots of black fruit. Sweet vanilla aromas and spicy flavors complement the smooth, lingering finish. Perfect with fresh fruit, light dessert and good deeds.
