The taste is best described as exotic, with layers of peach, apricot nectar, green melon and pear, overlaid with subtle notes of citrus zest and spicy vanilla. A rich, round mouth-feel supported by fresh acidity, brings the complexity of this wine into balance. Wonderful as an aperitif, served on a warm summer's day with family and friends, or pair it with a wide array of flavorful dishes and cuisines.

  • Caymus Napa Valley Cabernet Sauvignon 750ML

    Caymus the nose of this wine is especially interesting to me. There's the presence of a well-cared for, clean farmstead. Possibly the aroma of a freshly opened bale of hay or the combine dust during the summer harvest at my cousins wheat farm in St. John, Washington. This is layered with the fruit components─ ripe cherries crushed in a snifter, a subtle smell of ripeness. And a bit of grape pumice at fermentation, rustic. Other nuances come to mind─ smoke in a forest cabin, earth, spice and cola. The flavors in this wine are genuinely good, but the textural elements are its most exceptional feature. The entry wanders, deliberating, then evolves and expands to cocoa- like fine tannins in harmony with oak, fruit and acidity. A balanced and harmonious wine with a long evolution.

    Cazadores takes fully mature agave, steam cooks it, macerates and sets it to ferment while it is serenaded by Mozart for 7 days as the yeast converts the agave sugars into alcohol; then it is distilled twice and aged ‘at least’ 3 years to become an ‘Extra Añejo’. The nose shows caramel, hazelnuts, meringue, earth, toffee and apples baked with spices. We have a delicious, sweet base as velvety as a velvet cushion. Now the velvety base is blended with extracts of juicy black raspberry and blackcurrants.     Champalou the harvest is carried out at the cold temperature of the morning, and the grapes are directly pressed on arrival at the winery. Fermentation is carried out in stainless-steel tanks in our cellar. The wine is matured at cold temperature on its lees for eleven months before bottling. The freshness and and delicate aromas of the wine make it a perfect partner with grilled fish and white meats, shell-fish, roasted vegetables and oriental food. When young, this is also a first-rate aperitif wine.
